In Seattle at Pike’s Place Market there is this amazing little shop called Pappardelle’s. Pappardelle’s makes from scratch pasta you can purchase their orzo I used in this recipe here, or you can use any other orzo pasta you can find in your city. Their orzo here has incredible flavor and did not need much additional flavors for this dish. If you are shopping in your city, look for an orzo similar to the asian orzo or rainbow orzo, both are great.

Ingredients:
1 cup Pappardelle’s Rainbow Orzo
2 ears of sweet corn, shucked and trimmed
10-12 cherry tomatoes (about one small package), halved
8-10 oz. green beans, trimmed and cut into bite sized pieces
1 tablespoon olive oil
handful of basil, thinly sliced
salt and black pepper
red pepper flakes
Directions:
1. Cook your orzo, follow instructions
2. In a large bowl combine orzo, sweet corn, cherry tomatoes, green beans and olive oil and stir with a wooden spoon
3. Season to taste with basil, salt, black pepper and red pepper flakes
